Eastern Cantaloupe Gazpacho

Ingredients
  

  • 1 medium EasternCantaloupe diced
  • 1 cucumber diced
  • 1 yellow pepper diced
  • 1/2 onion diced
  • 1 serrano pepper seeded and sliced
  • 1 1/2 tbsp sherry vinegar
  • 1 cup water
  • 1/3 cup olive oil
  • salt to taste
  • 4-6 slices Prosciutto

Instructions
 

  • Add all ingredients to a blender except for olive oil, and blend.
  • Slowly drizzle in olive oil while blending.
  • Chill and serve with prosciutto.
