Begin by preparing all of your ingredients. Dice all of the fruit/veggies into small bite size pieces - make sure they are all about the same size.
Add the ingredients to a bowl and mix together.
Taste and adjust seasoning. If you like your relish a little sweeter, add more sugar. Saltier? Add more salt! Tangier? Add a squeeze more lemon. Let sit in the fridge for 30 minutes. This will help the flavors meld together!
Eat this relish on top of tacos, grilled chicken, with tortilla chips, or just by the spoonful!
